Who doesn`t like crêpe?
At carnevals or fun fairs we always get crêpe and usually with lemon and sugar topping, but these buckwheat crêpe you can very well fill with what every you like; for example egg, cheese, spinach, tomato sauce or ham.
I find using only buckwheat flour makes the crêpes too heavy so I mix in another lighter flour type like spelt.
Please experiment with the recipe to find your favorite mix.
What you need:
* 150 g spelt flour
* 150 g buckwheat flour
* 50 ml milk
* 50 ml water
* 1 egg
* 1 teaspoon sugar
* 1 teaspoon salt
What you do:
Mix well all the ingredients in a bowl. Let sit for 30 minutes and then stir it again.
Heat a pan – medium to high temperature – add a little butter and when melted make thin and golden crêpe.
Fill them with topping of your choice.
