Mango Salsa

mangosalsaMango salsa is easy to make and goes so well with fish and pork.

Mango is used to make juices, smoothies, ice cream, fruit bars, raspadosaguas frescas, pies and sweet chili sauce, or mixed with chamoy, a sweet and spicy chili paste. It is popular on a stick dipped in hot chili powder and salt or as a main ingredient in fresh fruit combinations.

As as side dish this recipe serves 4.

What you need:

* 1 ripe mango, peeled, pitted, and diced (about 1 1/2 cup) (See: How to Cut a Mango)
* 1/2 medium red onion, finely chopped
* 1 Jalapeño chile, minced
* 1 cucumber, peeled and diced
* 3 Tbsp fresh cilantro leaves, chopped
* 3 Tbsp fresh lime juice
* Salt and pepper to taste

What you do:

Combine all of the ingredients in a bowl.
Season to taste with salt and pepper.
If the salsa ends up being a little too hot or acidic for your taste, you can temper it by adding some diced avocado and/or sugar.
