Risoni Mushroom Feta Salad

Risoni or Orzo is a form of short-cut macaroni, shaped like a large grain of rice. Risoni can be served alone, as a soup accompaniment, as part of a salad, or baked in a casserole.

This wonderful salad can be served as main dish with a green salad and a piece of bread or it will work well as a side dish to meat or fish.

What you need:

* 250 g risoni
* 400 g baby spinach lettuce
* 250 g white mushrooms, sliced
* 150 g fresh or sun dried tomatoes
* 150 g feta cheese crumbles
* Lemon – 1/2 (or 1 teaspoon lemon juice)

What you do:

Boil pasta in salted water until tender, then drain.
Heat oil in large heated sauté pan.
Add spinach and mushrooms to saute until tender.
Transfer pasta to large mixing or salad bowl.
Once spinach is reduced (but not overcooked), add it to the pasta in bowl.
Add the cheese and squeeze lemon over the top.
Toss and serve.

    Tried the Risoni Mushroom Feta Salad this weekend, and it was a crowd pleaser. Doubled the recipe and it feeds 10-12 adults as a side dish at a BBQ.
