Beet and Apple Salad

A fresh and tasty salad which works well alone served with perhaps bread and it can also be served as as side dish to white meat.

What you need:

* 2 apples, sliced
* 4 celery stalks, sliced
* 1 shallot, minced
* 1 lemon, juice
* 1 medium beet, slice into matchsticks
* 1 tsp sugar
* 3 tbsp walnuts, chopped
* 2 tbsp olive oil
* Endive salad
* Salt & pepper

What you do:

Slice up, chop and squeeze everything except the endives. Toss together in a bowl and taste to salt, pepper and lemon juice.
Place the mix on a bed of endives already prepared on a serving plate.
